What Is a Cookery Traineeship?
A cookery traineeship in Australia is a structured training program that combines:
- Paid, hands-on work in a commercial kitchen (like a café, hotel, or restaurant)
- Formal training at a Registered Training Organisation (RTO) Adelaide Institute of Hospitality
- Can leads to a trade qualified pathway.
The SIT30821 Certificate III in Commercial Cookery is a nationally recognized qualification in Australia that prepares individuals for roles in the culinary industry. This course focuses on developing practical skills and knowledge required to work effectively as a commercial cook.
Course Overview:
The qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Graduates work with some independence and under limited supervision, following plans, policies, and procedures.
Entry Requirements:
While there are no specific entry requirements for this qualification, it’s recommended that candidates have a passion for cooking and a desire to work in the hospitality industry. Candidates are required to complete literacy and numeracy assessment for assessment of needs before commencing.
Course Duration and Delivery:
The duration of the course is approximately 36 – 48 months.
On-the-job training:
- You work for an employer in a real job.
- You learn hands-on skills while doing your day-to-day tasks.
Off-the-job training:
- You study with a Registered Training Organisation, us the Adelaide Institute of Hospitality
- This is where you learn the theory and technical side of the job
AIOH offer two forms of off- the job training:
Day release:
Students attend training every Monday for 18 months excluding public holidays
Block Release:
Students attend training for a week every 3-4 months over a 36 – 48 month period.
Course Structure:
To be awarded the SIT30821 Certificate III in Commercial Cookery, students must complete a total of 25 units, comprising:
- 20 Core Units
- 5 Elective Units
Units cover areas such as food safety, kitchen operations, menu planning, and preparation of various dishes.
You might be eligible for subsidised training if you live or work in South Australia, and are:
- an Australian or New Zealand citizen
- a permanent Australian resident or
- an eligible visa holder.
You also need to be:
For adult learners
- 16 years or over and not enrolled at school or
For those still at school
- enrolled in Year 10, 11 or 12 and employed in a Training Contract that combines VET and SACE or school-based curriculum

Funded gap fee: $500.00 per year of contract of training (billed to employer)
